Mandarin and Cantonese are different spoken languages
They are not accents of one another. A Cantonese recording transcribed as Mandarin will produce poor output, so set the spoken language correctly before processing rather than relying on a generic Chinese setting.
No spaces, and character-based line limits
Chinese is written without spaces between words, and full-width characters are wider than Latin ones. Line breaks fall at phrase boundaries, and per-line limits are counted in characters well below the Latin-script default.
